I brought out this charcuterie board with mochi donut holes for a weekend brunch and it instantly became the talk of the table. Friends loved mixing bites of salty meats with the chewy, sweet donut holes and everyone had fun building their own combinations.

Ingredients

  • Meats & Cheeses: 100 g prosciutto, 100 g salami, 100 g smoked turkey breast, 120 g sharp cheddar (sliced), 120 g brie (sliced), 120 g Manchego (sliced)
  • Accompaniments: 1 small bunch red grapes, 1 apple (sliced), 1 pear (sliced), 1/2 cup dried apricots, 1/2 cup mixed nuts (almonds, walnuts, pistachios), 1/2 cup olives (green and black, pitted), 1/2 cup cornichons or mini pickles, 1/4 cup honey, 1/4 cup grainy mustard, crackers (gluten-free if desired)
  • Mochi Donut Holes: 1 cup (120 g) sweet rice flour (mochiko), 1/4 cup (50 g) sugar, 1 tsp baking powder, 1/8 tsp salt, 2/3 cup (160 ml) milk, 1 large egg, 2 tbsp unsalted butter (melted), oil (for frying), 1/4 cup powdered sugar (for dusting)

Instructions

Make Mochi Donut Holes:
Whisk together sweet rice flour, sugar, baking powder, and salt in a bowl. In a separate bowl, mix milk, egg, and melted butter. Pour wet ingredients into dry and mix till smooth and sticky.
Fry Donut Holes:
Heat oil in a deep pan to 170°C (340°F). Roll dough into 1-inch balls with lightly oiled hands. Fry in batches for 2 to 3 minutes until golden brown, turning occasionally. Drain on paper towels and dust with powdered sugar. Cool completely.
Arrange Platter:
Fan meats and cheese slices on a large board or platter. Add clusters of grapes, apple and pear slices, dried apricots, mixed nuts, olives, and cornichons in small piles or bowls.
Add Condiments:
Place honey and mustard in small ramekins.
Finish with Crackers & Mochi Donut Holes:
