# Method:
- Combine all-purpose flour, baking powder, and salt in a medium bowl; whisk to combine.
- Beat softened butter and granulated sugar in a large bowl until light and fluffy, approximately 2 minutes.
- Add the egg and vanilla extract to the butter mixture and blend until fully incorporated.
- Gradually add dry ingredients to the wet mixture, stirring until a smooth dough forms.
- Divide dough into two portions, shape each into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Set oven to 350°F (175°C). Line two baking sheets with parchment paper.
- On a lightly floured surface, roll out chilled dough to 1/4-inch thickness. Cut out mitten shapes using a cookie cutter.
- Place cut cookies 1 inch apart on prepared baking sheets.
- Bake cookies for 10 to 12 minutes until edges are lightly golden. Cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- Whisk powdered sugar, egg whites, and lemon juice on low speed until smooth and glossy. Divide and tint with desired gel food colors.
- Pipe the tinted royal icing onto cooled cookies and embellish with sprinkles or edible decorations. Let icing set thoroughly before serving or displaying.
