# What you'll need:

→ Oats Base

01 - 1 cup old-fashioned rolled oats
02 - 1 cup milk (dairy or non-dairy)
03 - 1/2 cup Greek yogurt (or plant-based alternative)
04 - 2 tablespoons chia seeds
05 - 1 to 2 tablespoons honey or maple syrup
06 - 1/4 teaspoon vanilla extract
07 - Pinch of salt

→ Strawberry Lemonade Mix

08 - 1 cup fresh strawberries, hulled and diced
09 - 2 tablespoons freshly squeezed lemon juice
10 - 1 teaspoon finely grated lemon zest
11 - 2 teaspoons poppy seeds

→ Toppings

12 - Sliced fresh strawberries
13 - Additional lemon zest
14 - Extra poppy seeds

# Method:

01 - In a medium bowl or large jar, combine the oats, milk, Greek yogurt, chia seeds, honey or maple syrup, vanilla extract, and salt. Stir well until fully incorporated.
02 - In a separate small bowl, mash half of the diced strawberries with the lemon juice and lemon zest until juicy but still chunky.
03 - Fold the mashed strawberries, remaining diced strawberries, and poppy seeds into the oat mixture. Stir until fully combined.
04 - Cover the bowl or seal the jar, and refrigerate overnight (at least 6 hours) to allow the oats to soften and flavors to meld.
05 - In the morning, stir the oats. Add a splash more milk if a thinner consistency is desired.
06 - Divide between two bowls or jars. Top with extra strawberries, lemon zest, and poppy seeds if desired. Serve chilled.
