07 - 1 1/2 teaspoons baking powder
08 - 1/4 teaspoon salt

09 - Zest of 1 large orange
10 - 1 teaspoon vanilla extract
11 - 1 cup mixed fresh berries (such as blueberries, raspberries, strawberries)
12 - Optional: extra berries and powdered sugar for serving
# Method:
01 - In a large bowl, whisk together ricotta, eggs, milk, melted butter, orange zest, and vanilla extract until smooth.
02 - In a separate bowl, combine flour, granulated sugar, baking powder, and salt.
03 - Add dry mixture to the bowl with wet ingredients, stirring gently until just combined. Batter should remain thick and lumpy; avoid overmixing.
04 - Carefully fold in 3/4 cup of mixed berries, reserving remaining berries for garnish.
05 - Heat a non-stick skillet or griddle over medium heat and lightly grease with butter.
06 - Pour approximately 1/4 cup batter for each pancake onto the preheated skillet. Cook for 2–3 minutes, until bubbles form and edges set.
07 - Turn pancakes carefully and cook for an additional 1–2 minutes until golden and fully cooked through. Repeat, adding more butter as needed.
08 - Arrange pancakes on plates and top with reserved berries and powdered sugar as desired.
