Holiday Fruit Citrus Mint (Printable)

# What you'll need:

→ Fresh Fruits

01 - 1 cup pineapple, peeled and cubed
02 - 1 cup strawberries, hulled and halved
03 - 1 cup green grapes, halved
04 - 1 cup red grapes, halved
05 - 2 kiwis, peeled and sliced
06 - 2 clementines or mandarins, segmented
07 - 1 pomegranate, seeds only

→ Citrus Mint Dressing

08 - 3 tablespoons fresh orange juice
09 - 1 tablespoon fresh lime juice
10 - 2 teaspoons honey or maple syrup
11 - 1 tablespoon finely chopped fresh mint leaves
12 - 1/2 teaspoon finely grated lime zest
13 - Pinch of salt

# Method:

01 - Wash, peel, and cut all fruit as listed. Combine prepared pineapple, strawberries, green and red grapes, kiwis, clementines, and pomegranate seeds in a large mixing bowl.
02 - In a small bowl, whisk together orange juice, lime juice, honey or maple syrup, chopped mint leaves, lime zest, and a pinch of salt until the mixture is well blended.
03 - Pour the citrus mint dressing over the mixed fruits. Gently toss to evenly coat all pieces.
04 - Refrigerate the tossed fruit for a minimum of 30 minutes to allow flavors to meld.
05 - Serve chilled, garnished with additional mint leaves as desired.
