# Expert Advice:

01 -
  • It's shockingly simple, no baking, no fuss, just coffee and patience.
  • The wobbly texture is fun and unexpected, like eating a cloud that tastes like your morning cup.
  • You can make it ahead and look effortlessly elegant when guests arrive.
02 -
  • If your gelatin clumps, it's because you added it to the coffee without dissolving it first, always melt it separately.
  • Don't pour the coffee mixture into the fridge while it's still steaming hot, or condensation will ruin the texture.
  • Use a shallow pan so the jelly sets evenly and you get nice uniform cubes.
03 -
  • Taste your coffee before adding gelatin, because once it sets, you're stuck with that flavor.
  • If you want firmer jelly, add an extra half teaspoon of gelatin, but I like it soft and wobbly.
  • Use a wet knife to cut the jelly cleanly, it won't stick and the cubes will look sharper.
