# Method:

01 - Preheat oven to 350°F. Grease and line two 9-inch round pans with parchment paper.
02 - In a medium bowl, whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger until evenly combined.
03 - In a large bowl, beat granulated sugar, brown sugar, and vegetable oil until homogeneous. Add eggs one at a time, beating thoroughly after each addition. Incorporate vanilla extract.
04 - Gradually add dry mixture to wet ingredients, mixing just until no streaks remain.
05 - Gently fold in grated carrots, chopped walnuts or pecans, shredded coconut, and 1/2 cup drained pineapple using a spatula.
06 - Divide batter evenly into prepared pans and smooth surface. Bake for 35 to 40 minutes, until a toothpick inserted in the center emerges clean.
07 - Allow cakes to cool in pans for 10 minutes. Remove from pans and transfer to wire racks to cool completely.
